Keto-diet-friendly strawberry ice cream. I experimented with lots of sweeteners, combos of cream and other liquids, and finally arrived at this very simple combo that tastes like the real thing, if not better.

Ingredients | Cone Strawberry Flavour Ice Cream

5 strawberries, hulled

2 ½ cups heavy whipping cream

⅔ cup low-calorie natural sweetener (such as Swerve®)

½ cup water

2 teaspoons vanilla extract

1 teaspoon lemon juice

½ teaspoon vodka

1 pinch salt

Directions

Place strawberries in a food processor or blender; puree until smooth.

Whisk strawberry puree, cream, sweetener, water, vanilla extract, lemon juice, vodka, and salt together in a bowl; pour into an ice cream maker.

Process ice cream according to manufacturer's instructions. Transfer to a freezer-safe container and freeze until firm.
